By nose: A complex blend of stone fruit, green pear and pineapple. By mouth: balanced acidity, grapefruit, Gravenstein apple and minerality. This unoaked Chardonnay pairs beautifully with crab cakes, salmon tartar, bacon wrapped scallops, prosciutto and figs. This is a great vegetable wine, especially with heirloom tomatoes.
We started harvest on August 15 – a solid week later than the year prior, and this was our first bountiful vintage in four years. Total production was back up to about 23,000 cases – not quite where we were in 2014, but at least in the ballpark.
The grapes for our UnOaked Chardonnay have an overnight skin contact soaking before pressing to control acidity, followed by a cold, stainless steel fermentation to retain brightness, minerality and exotic fruit elements.
