“I just wanted to send a quick note of thanks for making the Unoaked Chard… it is a great balance of fruit and elegance that both my wife and I can enjoy.”
TASTING NOTES
The nose on this vintage has juicy red apple, lychee fruit, dried stone fruit and hints of tropical fruit. Citrus notes on the front palate, with juicy apple following amazing acidity throughout the mouth and a touch of pear on the end with a sophisticated finish.
WINEMAKER NOTES
All of the UnOaked Chardonnay had an overnight skin contact soaking before pressing to control acidity with a cold stainless steel fermentation (between 60f and 63f) to retain esters, i.e., brightness, minerality and exotic fruit elements.
Sparkling Wine with Mexican food is a startling and delicious match, especially with an elegant and sophisticated dish like this recipe for Red Enchiladas with Cheese. Serve with a side of guacamole. Avocados and bubbly are both rich in umami. (Umami is like a “super flavor” – a special “deliciousness” that scientists consider a unique, fifth taste.) The pairing works because of complimentary richness and creamy texture, This recipe serves six to eight.
