The 2013 Blanc de Blancs is both vibrant and flavorful, showing elegant and distinctive Chardonnay character; a great food wine. Made from 100% chardonnay and aged eight plus years en tirage. It will, like all of our Blanc de Blancs, improve with time on the cork.
On the nose: lime, hazelnut, toasted wheat and a touch of ninerality. In the mouth: Tahitian lime, green apple with some minerality at the finish. Enjoy with oysters, smoked salmon, small Yukon gold potatoes with caviar, sushi, crab cakes, pasta with chanterelle mushroom ragu and Parmesan, sea bass, fried quail with corn bread, roast chicken, ginger snap cookies.
Location. Location. Location. Our proximity to the ocean in cool, foggy Green Valley yields a very distinctive style of Chardonnay, especially for Sparkling.
The dosage for the 2013 Blanc de Blancs is 4ml of Blanc de Blancs LEX and 4ml of 2015 Rued Clone Chardonnay.
