The 2018 Brut X is extremely dry, extremely bright and extremely expressive. This is the kind of bubbly you can drink all night long. There is so little residual sugar in the dosage it is barely perceptible.
“Beautiful balance comes from the details.”
“This sparkling wine is firmly structured, showing ample apple and lemon acidity, a bone-dry mouthfeel and restrained green-apple and apricot flavors. Described as Iron Horse’s driest offering, it feels as if it is built for further aging and should show its best stuff after 2025. 93 Points (2018 Vintage).”
TASTING NOTES
Aromas of baked apple pie, vanilla, strawberry and lemon. Creamy through the mouth, with great acidity. Green apple is very present on the front palate, dried apricot on the mid palate, followed by a hint of frangipane on the back palate.
WINEMAKER NOTES
Our dosage for the 2019 Brut X is 6ml bottled Brut, 2ml Deer Gate Pinot Noir, 2ml 2018 Rued Clone Chardonnay.
Sparkling Wine with Mexican food is a startling and delicious match, especially with an elegant and sophisticated dish like this recipe for Red Enchiladas with Cheese. Serve with a side of guacamole. Avocados and bubbly are both rich in umami. (Umami is like a “super flavor” – a special “deliciousness” that scientists consider a unique, fifth taste.) The pairing works because of complimentary richness and creamy texture, This recipe serves six to eight.
