By nose: Rising dough, orange marmalade and baked apple. By mouth: Ripe red
apple, mandarin orange and hazelnut. A perfect wine with poached eggs, smoked salmon and toast, salade Nicoise, hard cheeses, classic roast chicken with Yukon gold potatoes, fresh summer berries and sliced peaches.
2015 was a bitter-sweet vintage. Excellent quality, but terribly disappointing quantity – down nearly 50%. Our earliest start date ever: August 4th, beginning with Rued Clone Chardonnay for Sparkling.
The composition of the dosage, or finishing element, for this wine is 6 mls of Brut LEX, 6 mls of 2010 Rued Chardonnay, 8 mls of 2014 Estate Pinot Noir, and 6 mls of 1983 Brut.
