2005 Ultra Brut

Ultra Brut means ultra dry, ultra bright, ultra expressive. The dosage is under 0.6% residual sugar - barely perceptible, but adds just the right amount of "polish."

Food Pairing

Serve with anything raw, including oysters, fruit, vegetables, sushi and sashimi, cured and smoked fish, even yogurt.

Accolades

New vintage, not yet reviewed. The 2004 vintage was awarded 94 points by Wine Enthusiast and 90 points by the Wine Advocate's Robert Parker. The Santa Rosa Press Democrat awared this vintage 4 1/2 stars.
