All of the Corral Vineyard Chardonnay had at least two hours of skin contact in the press and was fermented in small, water bent, French oak barrels. Frequent lees stirring or ’batonnage’, at least three times a week for over seven months, contributes to the full and creamy mouth-feel.
Rich in citrus, tropical fruit and green apple flavors, with a light smoky jacket of oak. The acids and tannins lift it above the ordinary, as does a stony minerality that tastes of the soil.

The creamy texture of this wine lends itself to dishes that mirror its luscious mouth feel. Delicious with gougeres as an hors d’oeuvre or a more robust cheese soufflé, white wine braised chicken thighs, with tarragon and cream, gnocchi with brown butter, walnuts and sage or grilled halibut topped with spring onions and leeks.
