Chinese CuvéeChinese Cuvee is a special, limited edition, vintage Sparkling Wine created to celebrate the Year of the Dragon. The Chinese character on the fan at the neck of the bottle means dragon. Iron Horse was approached by a Chinese wine importer attracted to the Sonoma winery because the Clintons served Iron Horse at the State Dinner for Chinese President Jiang Zemin in 1997. Iron Horse has shipped 880 cases of this first disgorging of Chinese Cuvee to Beijing. There are 120 cases available for sale in the USA – going first to the Iron Horse wine club. Iron Horse plans to create a new vintage of Chinese Cuvee each year and is looking ahead to 2014, which is the Year of the Horse. Food PairingDesigned expressly for celebrations, this cuvee pairs beautifully with Chinese cuisine. Chef Ming Tsai paried this vintage with roasted sweet potato soup and crispy duck confit, roulade, soy marinated Alaskan butterfish and "eight treasure rice packet" with dried fruit and pork sausage at the State Department luncheon for Chinese Vice President Xi Jinping.
